Let the night linger
As the sun dips below the horizon, casting warm amber hues across the shoreline, a gentle breeze stirs the palms and carries the distant sound of waves breaking on soft sand. Lanterns glow softly along the beach, illuminating faces gathered in quiet conversation, barefoot in the sand but dressed in linen and ease. This isn’t a raucous beach party, it’s a celebration of quiet luxury, of good company, and of finer tastes.
In hand? A glass that reflects the moment: rich, golden, and deliberate. The Clifton Hall Rum Old Fashioned is the evening’s signature, an elegant reimagining of the classic cocktail, crafted with a Barbadian rum that speaks of heritage, warmth, and time well spent. Sip slowly. Let the night linger.

Recipe
Ingredients:
2 oz Clifton Hall 12 Year Aged Rum
1/4 oz Demerara syrup (or simple syrup if unavailable)
2 dashes Angostura bitters
1 dash orange bitters (optional, but adds nice depth)
Orange peel, for garnish
Instructions:
Add the Demerara syrup and bitters to a mixing glass.
Pour in the Clifton Hall rum.
Add ice and stir gently for 20–30 seconds until chilled and slightly diluted.
Strain into a rocks glass over a large ice cube.
Express an orange peel over the drink, rub it around the rim, and drop it in.
Optional Twist: Add a bar spoon of banana liqueur or a few drops of chocolate bitters to complement the tropical undertones of the rum.
Savory Pairings:
1. Charred Jerk Shrimp Skewers
The spice and smokiness of jerk seasoning contrast beautifully with the rum’s sweetness.
2. Seared Scallops with Brown Butter & Citrus Zest
Delicate and buttery, scallops pair wonderfully with the caramel and oak notes in the rum.
3. Prosciutto-Wrapped Grilled Pineapple
Sweet, salty, and tropical—a perfect bite to mirror the rum’s fruitiness.
4. Aged Manchego or Gouda with Marcona Almonds
Nutty, slightly sweet cheeses match the depth of the rum, while almonds add crunch.
5. Mini Roast Pork Sliders with Spiced Rum Glaze
Pulled pork glazed in a light rum reduction—sweet, savory, and indulgent.
